What do you do with all the leftover candy? Why not make it into an even taster treat? And maybe make it a bit “fun sized”

You buy bowls or buckets of candy and suddenly you have a ton leftover and you don’t want to gorge on it for the next week. Why not try something new?  You can make a candy pie and if you want to add a little marijuana – you have a leftover “Hallo-weed” pie.  This recipe is for a delicious candy pie and you can add a weed twist!

It’s a dangerously delicious concept: simply take a bunch of fun-size candy bars and make them a whole lot more fun by mounding them in a pie crust brushed with cannabutter. All you have to do is bake until melty and gooey to your liking, let cool briefly, and enjoy. Trick or treating may be for kids, but this pie will make you proud to be an adult.

Makes 8 servings

  • 1 unbaked pie crust (homemade or store bought)
  • About 1 pound halloween candy
  • 2 Tbsp plus 2 tsp cannabutter, melted (optional)

1.Preheat The Oven To 350

Have your unbaked pie crust at the ready.

2. Bush Your Crust

Using a pastry brush, gently brush the entire bottom and the inner sides of your pie crust with the melted cannabutter. Take care to apply it evenly along the surface or the party may not be equally as fun for everyone.

3. Unwrap A Big Ol’ Bunch Of Halloween Candy

I was working from an assorted bag of fun-size chocolate treats, and I used about half of the two pound bag (so, about 1 pound of candy). You can use whatever mix of candies you like. Mound the candy into the pie shell. Make sure to evenly distribute the candy. Fill it fairly close to the top of the shell, because the candy will lose a little volume as it melts.

4. Bake Until The Candy Is Melty And The Crust Is Toasty

About 35-40 minutes. If you feel as if the crust is browning more rapidly than the candy is melting, you can tent some foil over the edges of the crust.

Makes 12 Brownies

Ingredients

  • ½ cup cannabis infused coconut oil
  • 1/8 cup coconut oil
  • 4 ½ ounces unsweetened chocolate
  • 2 tablespoons cocoa powder
  • 1 cup packed brown sugar
  • 3 large eggs
  • ½ teaspoon vanilla extract
  • ¾ teaspoon salt
  • ¾ cup all-purpose flour

Directions

  1. Preheat the oven to 350 degrees. Line an 8-inch square baking pan with aluminum foil and grease foil with either butter or vegetable shortening.  
  2. Melt the canna-coconut oil and the chocolate together over low heat, stirring frequently.  Set aside to cool for 5 minutes.
  3. Stir together the flour, salt, and cocoa powder, set aside.  
  4. Stir the brown sugar into the melted chocolate mixture.  
  5. Beat in the eggs and continue mixing until well incorporated.
  6. Mix in the flour and salt until just incorporated.
  7. Pour into prepared pan and bake for about 25 to 30 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs clinging to it.
  8. Let cool in pan before using the foil to lift out the brownies and slice.

I make 6 minis to snack on during the week. You can also make one large soufflé by placing all the blintzes on top of the melted butter in a large baking dish. Then just pour the soufflé mixture over the crepes and bake for 1 hour.

Servings: Six 2-ounce ramekins
Prep time: 15 minutes
Cook time: 1 hour

For the crepes

  • 1 cup milk
  • ¼ cup cold water
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 eggs, lightly beaten
  • ¼ cup creamy cannabutter, melted and cooled
  • 1 stick grass-fed butter, cold (to grease the pan)

For the cheese filling

  • 1 cup ricotta cheese
  • ½ cup mascarpone cheese
  • 3 tablespoons confectioners’ sugar
  • ¼ cup crushed pineapple, drained
  • 1 egg

For the soufflé

  • 1 stick grass-fed butter, melted
  • 1 cup sugar
  • 4 eggs
  • 1½ cups sour cream
  • 2 teaspoons pineapple juice
  • 2 teaspoons vanilla
  • Pinch of cinnamon
  • ½ cup crushed pineapple
  • ½ teaspoon salt

Directions

  1. Blend together the crepe ingredients: milk, cold water, flour, sugar, eggs, and canna-butter.
  2. Heat a small nonstick pan on medium. Rub the stick of grass-fed butter around bottom and sides of the pan.
  3. Pour enough batter into the pan to coat the bottom. Cook for 30 to 40 seconds until the batter sets. Shake gently to loosen. Flip, using a small silicone spatula, and cook another 30 to 40 seconds. Transfer to a plate and repeat until all the batter is used.
  4. In a medium mixing bowl, combine cheese-filling ingredients: ricotta cheese, mascarpone cheese, confectioners’ sugar, crushed pineapple, and egg. Mix well.
  5. Place 1 tablespoon of the cheese filling in each crepe and fold the bottom of the crepe over the filling. Fold in both sides and then roll up over folded edges to create a closed little blintz. Set aside and repeat.
  6. Preheat oven to 340ºF.
  7. Pour 1 to 2 tablespoons of melted butter to cover the bottom of each of six 8-ounce ramekins. Place 1 crepe in each ramekin.
  8. Blend the remaining soufflé ingredients: sugar, eggs, sour cream, pineapple juice, vanilla, cinnamon, crushed pineapple, and salt. Pour the mixture over the crepes, filling each ramekin three-quarters full. Bake for 1 hour until golden brown and then serve.

*Approximate dose per serving is based on infusing 5 grams of cured/dried/decarbed cannabis into 1⅓ sticks of butter.
